Autumn is our favorite time of the year here in the berkshires. the menu changes to heartier dishes that go with crisp days and chilly nights. here is a recipe to warm you.

Autumn Harvest Bisque

1 large butternut squash peeled, seeded, and cut into 1 inch pieces

1 large onion, chopped

2 sweet potatoes, peeled and cut into 1 inch pieces

2 carrots, peeled and cut into 1 inch pieces

3 granny smith apples, peeled and cored,  and cut into 1 inch pieces

2 tbls. butter

1/2 cup maple syrup

1 tsp cinnamon

1 cup half and half salt and pepper to taste

melt butter in a large pot. Add the squash, onion, apples, sweet potatoes, and carrots.

Sweat the vegetables over low heat for 10 minutes.

Add water to cover vegetables by 1/2 inch. Simmer for 45 minutes, puree in batches, and return to the pot.

add the maple syrup, cinnamon, salt and pepper. heat to a simmer, and stir in the half and half.
