At last the long awaited summer is here. It is especially welcome here in the Berkshires where the Winters are long and the Spring is a frustrating tease.

Here is a zippy little summer recipe - great for part of a summer Buffet or by irself for a light supper.

VIETNAMESE BEEF SALAD


Serves 4
2 12 oz. steaks, such as hanger, flatiron, or sirloin

MARINADE


Marinade steaks for a few hours overnight

Grill the steaks over a charcoal grill, or broil them quickly until medium rare.

Remove the steaks from the heat, and let them rest for 20-30 minutes.

Slice the meat thinly across the grain and place in a bowl with 1 cup sliced cucumber and 2 carrots julienned

Toss with the dressing and serve over a bed of mixed greens, garnished with chopped basil, cilantro, and mint.
